Our tomato plants are finally putting out fruit! The woes of living on a mountain. Everything starts late and ends early. Our heat wave is gone and cold, wet weather is approaching. Perfect time for soup. Creamy Roasted Tomato Chia Seed Soup to be exact.
Here’s what you’ll need (makes 4-6 servings):
3 cups cherry tomatoes
1 can diced tomatoes
2 tbs tomato paste
1 cup chicken stock
1/2 tsp onion powder
1 tsp minced garlic
1 tsp garlic salt
1 tsp coarsely ground black pepper
1 tbs dried basil
1 tsp lemon juice
3 bay leaves
3 sprigs fresh thyme, whole
olive oil (for roasting tomatoes)
sea salt, to taste (for roasting tomatoes)
1/4 cup unsweetened coconut milk (from the can is best)
chia seeds, to taste
Place cherry tomatoes on an olive-oil greased baking sheet, sprinkle with salt and bake at 375 degrees for approximately 15 minutes, until tender. Move rack to top and broil tomatoes on high for approximately 5 minutes or until tomatoes mildly blackened.
Transfer tomatoes to a medium sized saucepan on medium heat. Get as many of the juices from the baking sheet into saucepan. Add canned diced tomatoes, tomato paste, minced garlic, spices, bay leaves and thyme sprigs. Bring to a boil then turn heat down to low and cover with a lid. Let simmer for 30 minutes. Stirring occasionally.
Whisk in coconut milk. Remove from heat and let cool for approximately 5 minutes.
Remove thyme sprigs and bay leaves. Transfer soup to a blender (or use an immersion blender). BE CAREFUL WITH THIS STEP. The last thing you want to do is have a scalding hot soup explosion in your kitchen!
If using a blender, make sure the container is only half full when blending. Use a towel and cover the lid firmly with your hand while blending. I used the mother of all blenders, my favorite Blendtech!
Stir in Chia seeds to taste or you can omit. My husband is weirded out by the little bug-like seeds (or maybe its residual Chia Pet association) so I left them out of his. He did say this was the best tomato soup of his life!! It was pretty delish if I do say so myself.
