Blackberry Cobbler (Dairy-free, Gluten-free and almost Paleo!)

Today I picked 2 pounds of blackberries from my own backyard. My skin was destroyed in the process but it was well worth it to get the goods. I froze half of the berries and decided to make a healthier version of Blackberry Cobbler with the rest. This cobbler turned out delicious! The topping melts in your mouth as the berries add a subtle pop!

     My poor arm after the blackberry attack. It was well worth the devastation because this cobbler is the bomb!

 

 

 

 

Ingredients

4 cups of blackberries

1 1/2 cups almond flour

1/2 cup oats

1/2 cup coconut oil

1 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla extract

1 to 2 tbs Stevia or sweetener of your choice (to mix with the berries)

1/4 cup maple syrup or sweetener of your choice (to mix with the topping)

Start with 4 cups of blackberries. Rinse and drain well. If using wild blackberries you may want to double rinse…triple rinse, or even  soak. You wouldn’t believe how many bugs I found on these things!

Place so fresh and so clean berries in a baking dish. Add a sweetener of your choice if desired. I sprinkled mine with about 1 tbs of Stevia.

Add remaining ingredients into a medium sized bowl. Omit the oats if following a Paleo diet.

This is the fun part, mix with your hands! The mixture should be somewhat crumbly. I wont judge if there is some taste testing or finger-licking involved….

Spread the topping in an even layer over the berries. Mmmmn, this is starting to look good.

Bake in the oven at 375 degrees  for 18-22 minutes. Until the berries are somewhat juicy and the topping is golden.

Serve with coconut whipped cream or better yet, vanilla ice cream!

    I made this last night and it was delicious! The only thing I changed was using a berry mix because I didn’t have blackberries. Thanks for the recipe.
